Issue enough ag visas so that farmers don't have to hire illegals or leave their crops to rot.
The shortage of ag visas is intentional. It's a disruption to the food chain, now that the usual workers are scared away.

one U.S. farmer can produce enough food to feed approximately 155 people, so it would take about 6 to 7 farmers to feed 1,000 people.
So if our farms were manned with nothing but Mexicans it would take 2.5MM of them to feed 350MM Americans.
This gives you some sense of scale...although I think the estimate is pretty low.
One guy can grow and harvest a lot of cereal grain thanks to machinery.
